Soba", which in Japanese means buckwheat, is a Japanese noodle made from buckwheat flour. They first appeared over 300 years ago and are now an integral part of the Japanese diet. While in summer they are eaten cold, in winter they are the queen of soups and stir-fried vegetable dishes.  
As well as being delicious and easy to cook to your taste, the buckwheat they contain is very healthy. With a low glycemic index and the absence of gluten, they are rich in antioxidants and starch, nutrients that are good for our health and our intestinal flora.
